Sand storage is a method of keeping root vegetables fresh by burying them in layers of slightly damp sand inside a container, which cuts off their exposure to air and slows the moisture loss that causes shriveling. It only works well for true root crops with tough skins, so stick to carrots, beets, parsnips, turnips, rutabagas, and celeriac.   1. Harvest on a dry day and cure the skins. Brush off dirt with your hand, don’t wash them, and trim the tops to about an inch above the crown. Leave the roots out of direct sun for a day or two to let cuts and nicks toughen up. Any water left on the skin is an invitation for rot.
  2. Choose a container 12 to 18 inches deep. A wooden crate or plastic tote both work. If you’re using a lid, drill a few holes for airflow, or just leave it cracked.

That cold end of the range slows respiration in the roots, which is what makes them soften and sprout, while staying above freezing keeps the water inside their cells from rupturing.

Garages and sheds are notorious for swinging wildly between those two failure points depending on the weather, so check the spot with an actual thermometer for a few days before you commit a whole harvest to it. My unheated garage runs cold enough most winters that I keep the bin up off the concrete floor on a couple of scrap boards, since concrete pulls heat out of a container fast and the corner nearest the door has flirted with freezing more than once.

Bury the Box in the Ground If You Don’t Have a Cold Spot

If nothing in your house or garage holds a steady 32°F to 40°F, bury a lidded garbage can in the ground and pack it with sand and roots the exact same way. Dig the can into the soil, layer it with slightly damp sand the same way you would a box indoors, and pile straw or another insulating material over the top to keep it from freezing. The soil around a buried can holds a far steadier temperature than an above-ground garage does, which solves the swinging-between-failure-points problem entirely.

This works best if you get at least some real winter. Ground that never gets properly cold won’t bring your roots down into the 30s no matter how deep you bury the can. If you’re gardening somewhere that barely sees a frost, your best bet is the coolest corner of a basement or an old chest freezer left unplugged and cracked open for airflow, either will get you closer to the right range than an unheated garage in a warm climate ever will.

Fix Rubbery, Moldy, or Mushy Roots

Rubbery or shriveled roots mean the sand has dried out, soft spots and mold mean the storage spot is too warm or wet, and mushy, translucent flesh means the roots froze. Each problem has a different fix, and catching it early saves the rest of the box.

If the roots feel rubbery, mist the sand with a spray bottle until it’s evenly damp again, not soaked, and check again in a week. If you’re seeing soft spots or a moldy smell, pull every affected root immediately since rot spreads to its neighbors fast, then move the whole box somewhere cooler or crack the lid for more airflow. If the roots have gone soft and watery after a cold snap, they’ve frozen and there’s no reversing it, so use them right away in soup rather than trying to store them again.
