When dehydrating meat and fish, it’s essential that you use a high-quality dehydrator like the Excalibur, with its carefully controlled temperatures and even, consistent airflow. Using a cheaper model is potentially dangerous, as, if these products aren’t dehydrated fully and at the right temperature, dangerous bacteria may remain or other harmful bacteria strains may grow. So only try these recipes if you’ve got a decent dehydrator and you’re sure you can establish that the flesh is properly, safely dried.
